Tequila Jalapeno Steak Tacos – Homemade Salsa – Chipotle Aioli

Mexican food. It’s where it’s at my friends! I’m currently obsessed with tequila marinating meat for tacos. YUM! So, this blog is essentially 3 recipes. All of them are super easy, and can be altered to be whatever you want them to taste like! But, here goes

Tequila Jalapeno Steak

2 pounds of meat ( I used bottom round steaks)

1/2 cup tequila

the juice of one lime

3 jalapenos chopped very small

1 tablespoon dried cilantro

1/4 cup olive oil

salt and pepper

Mix all the ingredients and marinade the steaks for at least 2 or 3 hours if not overnight. Just before you are ready to assemble your tacos, grill your steak until medium done.

 

Salsa – For those of you who just got stoked to have Holli’s super secret salsa recipe. It ain’t happening folks. Sorry.

4 cups chopped tomatoes

jalapenos

1 onion

cilantro

salt and pepper

I like my salsa smooth, so I blend mine  in a food processor, but you can use a blender or you can just chop everything very fine.

 

Chipotle Aioli

1/4 cup sour cream

1/8 cup mayo

salt & pepper

1/4 teaspoon cayenne pepper

1 tablespoon chipotle peppers ground to a paste

juice of 1/2 lime

Mix together. Let set in fridge for at least an hour so that the flavors can mellow.

 

In my opinion tacos should always and only be made on corn tortillas! You can warm these on the grill if you want, or if you have a gas stove, you can just set the directly on the burner and turn frequently until warm through. Assemble your taco with whatever toppings you like and enjoy!
