Coconut Curry.


I have a great appreciation for all things ethnic. And I’m not sure how “authentic” this is. But holy cow. You’ll never want another kind of curry ever again! Coconut milk is the special ingredient, and it is my absolute favorite! It makes this gloriously silky sauce that you can literally just eat with a spoon. Forget everything else. Just eat the sauce. It is an idiot proof recipe. You’ll thank me later!

I really like to serve this sauce over brown rice with steamed broccoli, most people like chicken. But you can literally use anything! Chicken, pork, carrots, cauliflower, whatever you want!

Coconut Curry. 

1 large onion, chopped

1 teaspoon minced garlic

2 Tablespoons Butter

2 Tablespoons coconut oil

2 Tablespoons Curry Powder

1 Can coconut milk

3/4 cup chicken Broth

Salt & pepper to taste

Saute the onion & garlic in oil and butter until they turn a golden color.  Add in the curry powder and stir for about a minute. Add in the coconut milk and chicken broth and bring to a slow boil. Stirring constantly, keep over medium low heat until it is slightly thickened. Serve over whatever the heck you feel like!
