This recipe is one that I hold very dear to my heart. This is a treat that my Grandmother, Jacky introduced me to when I was but a small girl. My grandma LOVES shopping. One summer my dad was doing work on my grandparents house down near Atlanta. My sister and I were given the unique opportunity to visit my grandma and grandpa without our 5 other siblings; something that never happened. We love our big family, but it means that there is a lot of sharing that goes on when it comes to grandparents. On this trip, my grandma took us shopping, and while on our shopping expedition, she treated us to lunch. We went to an amazing restaurant called OB’s BBQ, and since that day it has been one of my favorite places in Locust Grove. Their specialty was this BBQ potato. It is oh, so yummy!! It’s simple, it’s done in the crockpot.
BBQ Baked Potato
1 Chicken Breast per person, (I use boneless skinless)
1/3 cup BBQ sauce per Chicken Breast
Throw the chicken and BBQ sauce in a crockpot and cook it until the chicken literally falls apart.
Serve over baked potatoes with Cheddar Cheese, sour cream (homemade is my favorite! I’ll share that recipe soon!), and lots of pepper & Butter! It is seriously that easy. You couldn’t mess it up if you wanted to! You can use pork, I just prefer Chicken.
